Shepard's Pie Recipe

There's nothing like a warm, nostalgic meal to send you back to holiday times with the family and there's no meal that sends me back to my childhood like Shepard's Pie. If you haven't ever had it, it's basically all the best flavors combined into one casserole-type dish. DELICIOUS. Check out this lighter recipe variation using ground turkey instead of beef.

Ingredients:
1 lb lean ground turkey
1/2 tsp Garlic powder
2 tsp Parsley
1 tsp Rosemary
1 tsp Thyme
1 1/2 lb Russet potatoes
1 Yellow onion, diced
2 tbsp Tomato paste
Salt and Black Pepper
2 tbsp Olive oil
2 tbsp Butter
1/2 cup Whole Milk
1/2 cup Sour cream
1/4 cup Low-Skim Shredded Cheddar cheese
Directions:
In a large skillet, heat olive oil over medium/high heat and cook diced onion until soft and flavorful. At the same time, boil potatoes in a large pot of water for 16-18 minutes or until easily pierced with a fork.
Add ground turkey and spices (garlic powder, parsley, rosemary, and thyme) and sizzle until cooked through.
Add tomato paste, salt, and pepper and set to low heat to sizzle while you cook the rest.
Once the potatoes are boiled, mash them with the whole milk, sour cream, and butter.
In a glass or metal sheet pan, place the meat mixture at the bottom and then spread the potatoes over the top. Cover with the cheddar cheese blend and pop in the over under "Broil" for 5-10 minutes.
Take out and ENJOY!
