Creamy Avocado Pasta


I had been eyeing this recipe for a while on Pinterest and finally decided to make it my own just last week. To no surprise it was absolutely amazing! I mean you can't really go wrong with avocado in my opinion. This recipe is easy, full of healthy fats, and has plenty of plant-based protein. Vegan and vegetarian friendly. The ingredients below will make two servings. Try it yourself and let me know what you think!

Ingredients:

  • 1 Ripe Avocado

  • Handful of Fresh Basil Leaves

  • 2 tbsp Chopped Garlic

  • 2 tbsp Lemon Juice

  • Sea Salt

  • Red Pepper Flakes

  • 1/4 cup Unsweetened Almond milk

  • 1 Tomato or Several Cherry Tomatoes

  • 2 servings (about 6 oz) of Banza or other protein pasta

  • 1 tbsp Extra-Virgin Olive Oil


Directions: In a food processor (I use my Nutribullet), combine the avocado, basil, garlic, lemon juice, sea salt, rep pepper, and almond milk. Blend until creamy. Remove and set in the fridge while you make the pasta. Cook the pasta according to the directions on the box. Mix your creamy avocado pasta sauce with your pasta and top with tomato and some more crushed red pepper flakes. Enjoy!
