Chocolate Chip Protein Banana Muffins

Definitely the best banana muffin recipe I've created so far. Perfectly moist and subtly sweet, these are the best quick breakfast, midday snack, or even after-dinner dessert.


Ingredients:

  1. Bananas, ripe or previously frozen(3)

  2. Eggs (2)

  3. Pure Maple Syrup (1/4c)

  4. Vanilla Extract (2tsp)

  5. Kodiak Pancake Mix (1c)

  6. Rolled Oats (1/2c)

  7. Baking Powder (1tsp)

  8. Cinnamon (1/2tsp)

  9. Sea Salt (I used freshly ground, just 4 turns)

  10. Chocolate Chips

Directions:

Pre-heat oven to 350F. Mix all the wet ingredients together (bananas roughly, eggs, maple syrup, vanilla extract). In a separate bowl whisk all the dry ingredients together (Kodiak pancake mix, rolled oats ground into a flour, baking powder, cinnamon, salt). Then add dry ingredients to wet and fold over the batter/dough. Once mixed add your 1/3 cup of choc chips. Spoon ingredients in muffin sheet. Once all the batter is divided evenly sprinkle a few more choc chips on top for that aesthetic affect. Bake for 25 min, let cool, then enjoy!
